Za'atar leaves, well and gently dried, still keeping some of their colour, some stems present (as described, and easy to pick out) - I love using the leaves to make small quantities of the za'atar blend for hummus, pita or cooking chicken. It makes a fabulous combo with Moshe oil on hummus!
